Time for Summer Squash!

Last week I was busy entertaining my little sister who was visiting from Seattle. It’s absolutely amazing how much can happen in one week garden-wise. All of my vegetables are really growing, but my squash plants are out of control! I planted zucchini and yellow summer squash inside the vegetable patch. (I also planted butternut squash, which I will talk about in another post some day soon.) I have already picked a few yellow squash, and the zucchini is blossoming like crazy.
Over the winter, I went through all of my old cooking magazines and pulled out a bunch of recipes that called for summer squash. I am excited to try them out and if I run across some winners, I’ll be sure to pass them along. In the meantime, my favorite way to enjoy squash is to simply slice it into thin, vertical strips, toss with olive oil, season with salt & pepper, and then throw them on the grill. Absolutely delicious!
